Shrimp / Runt – same thing right?
Wanted something different for dinner and have been craving taco dip for quite some time. Decided it would make a nice Friday dinner. Please excuse the plastic wrap- this is actually our leftovers. Haha hunny- can you believe he asked me if a ‘taco dip’ would be enough for dinner… lmao

What you’ll need:
- Two packages of cream cheese
- Jar of salsa- preferably thick and chunky but your choice and a larger jar as you may need at least 2 cups
- Taco seasoning (optional)
- At least 1/2 of a bag of shredded lettuce- not ice berg there is no nutritional value in that crap. I used a bag of green leaf shreds because I was too lazy to chop up lettuce myself last night.
- One 8oz brick of cheddar cheese
- Two tomatoes- I prefer vine ripe
- One jar of black olives pitted
- About 1/2 a pound of cooked shrimp
First off mix the cream cheese and salsa- I use equal parts and just eyeball it. Depending on the size of your jar- it might be ALL OF IT. I would guess it’s roughly 2 cups. An electric beater makes short work of getting these two blended together. Dunk a chip in and taste it. Should still be thick and easy to scoop. You can always add a bit more salsa for flavor and consistency.
Take any platter. A large dinner plate could work too, but your base will be VERY thick under all your toppings. Spread all of your cream cheese and salsa base evenly on the platter. Then sprinkle very very lightly with taco seasoning- Penzey’s is always preferable in my house! Their fajita seasoning is awesome too… but I digress.
Take about half of the shredded lettuce and fluff it on top of the base. Then the entire 8oz of cheese, shredded. I prefer to shred my own cheese in my boat anchor -lmao. My mother calls her food processor a boat anchor because of how heavy it is, while mine is not as heavy- I still laugh.
Chop the two tomatoes- and of course eat the ends with pepper. That’s a must or the recipe won’t turn out. Ok so not really – but it’s a good cooking snack!

Then chop the olives – I used about 3/4 the can after my snacking. Spread both the olives and tomatoes on the top.
Last but not least chop your shrimp and toss ‘em on too! I cut mine in like 8ths so everything is very chip scooping easy to get it every bite.
